Recipe #39: Spicy Lamb Tacos

Your tacos could use some reviving. Switch things up and use American lamb in your tacos for a nutritious + delicious quick weeknight dinner! I was gifted some amazing lamb tenderloins from Capra Foods and the American Lamb Board and whipped up these easy tacos. Think spicy, bold flavor with creamy fresh guac and a perfectly charred soft tortilla. Take a look at the recipe below!

 

Here’s what you need:


– 2 lb bone in lamb tenderloins
– 1 tbsp cumin
– 1 tbsp chili powder
– 1 tbsp dried oregano
– 1 tbsp garlic powder
– 1 tbsp salt
– 1 tbsp black pepper
– 1 tbsp olive oil
– 1 tbsp avocado oil
– 1 avocado
– 1 cup cherry tomatoes, cut in half
– 1/3 cup red onions, diced
– 2 limes
– tortillas

Directions:

In a small bowl, add the lamb and all the seasonings plus olive oil. Toss well so the lamb is evenly coated. Then cover with plastic wrap and let marinate for at least 2 hours and up to 8 hours.

Next, put a frying pan or cast iron pan on high heat with the avocado oil. Once oil is hot, place the lamb tenderloins on the pan and cook for 4 minutes on each side. There should be a nice dark crust on the outside. When they’re done, place on a cutting board and allow to rest for five minutes.

Meanwhile, make your guac. Smash an avocado and sprinkle in salt and lime juice (I use about two tsp of salt and juice one lime for one large avocado). Then slice your lamb being careful to cut around the bone. Yes it’s more of a hassle but bone in meat tastes so incredible and this recipe is worth the extra work.

Last but not least, assemble your taco: get your tortilla (i like to toast it directly on the stove top so it gets a little charred) and place the sliced lamb on the bottom. Then add the onions, tomatoes and guac. Squeeze a little more lime on top and enjoy!!

Side note – I used some of my mom’s homemade mint chutney on the taco and it was insanely good. Don’t be afraid to add different sauces and spices to your taco!
