Week 9 and I’m still going… I only have three weeks left until I’m finished with my reset!
I just started seeing an acupuncturist – Stephen has an integrative medicine style which I like a lot more than what I’ve experienced in the past. We had an almost 2 hour session where we talked about my history of Hashimoto’s traumatic life events, and our favourite restaurants (because that just always happens). I think this is going to help me on my healing journey a LOT. Read below to see what I’ve eaten this week!

March 1
brunch – chollay my mom made that I had in the freezer
snack- Forager yogurt
dinner- homemade wild salmon with mashed sweet potatoes and side salad

March 2
breakfast- O’doughs bagel and scrambled eggs
late lunch/dinner- King crab legs, snow crab, mussels, deviled eggs, and oysters from TLC’s Texas Independence Day Party

March 3
breakfast- antipasto at a friend’s bridal brunch
lunch -Yucateco taco from One Taco
dinner- gf burger with sweet potato fries and a few bites of gf blueberry pancakes at Waterloo Ice House

March 4
breakfast- leftover blueberry pancakes from Waterloo
snack- Siete chips
dinner- homemade soup
dessert- homemade paleo banana bread*

March 5
lunch- Hippie Chick sandwich and salad from Shady Grove
dinner- Whole30 zucchini noodle lasagna
snack- Siete chips
dessert- berry smoothie*

March 6
breakfast- paleo banana bread
lunch- leftover cholay and rice
dessert- chocolate mousse
snack- Siete chips

March 7
breakfast- cashews
lunch- fish tacos and spinach salad from Hyde Park Grill
dinner- homemade steak tacos on Siete tortillas

 

*berry smoothie: 1/2 cup frozen mixed berries, almond milk, maca powder, coconut protein powder, 1 tbsp almond butter
*paleo banana bread: 25% cassava flour, 75% almond flour, eggs, baking powder, cinnamon, vanilla extract, coconut oil, ripe bananas
