IT’S GREEN CURRY SEASON Y’ALL 🥘
This yummyscrummy Thai green curry is going to be on repeat in your house all year around. Not only is it absolutely delicious but it’s full of good-for-you ingredients that will keep you feeling full and satiated!

Here’s what you need:

For the Pork Meatballs:
– 1 lb ground pork
– 1 tbsp coconut aminos or soy sauce
– 1/2 lime, juiced
– 1 tbsp fresh cilantro, chopped
– 2-3 garlic cloves, minced
– 1-2 green onions, chopped
– 1 egg
– 2 tbsp breadcrumbs
– Salt and pepper to taste

For the Green Curry:
– 1 tbsp avocado oil
– 1/2 red onion, thinly sliced
– 2 tbsp green curry paste (adjust for spice preference)
– 1 can coconut milk
– 1 cup chicken or vegetable broth
– 1 tbsp fish sauce
– 2-3 baby bok choy
– 2 carrots, sliced
– 8 oz king oyster or baby bella mushrooms, sliced
– 1 red bell pepper, sliced
– 1 cup baby spinach
– 1 lime, juiced
– Fresh cilantro, for garnish

For the meatballs:
1. In a bowl, mix all the ingredients together until evenly incorporated. Form into 1 inch balls and cook in the air fryer at 350 for 12 minutes or until the internal temp is 165.

For the green curry:
1. In a large pan, add oil and sauté the onion until translucent (about 3-4 minutes).
Then add in the bok choy, mushrooms, carrots and bell pepper.
2. Stir in the green curry paste and cook for another minute.
3. Pour in the coconut milk and broth, stirring to combine.
Bring to a simmer and leave alone for ~5 minutes.
4. Stir in the fish sauce and spinach. Cook for another 2 minutes and give it another stir.
5. Lastly stir in lime juice and taste for seasoning. Add in your meatballs and give another stir. If it needs more salt now is the time to add it!
6. Serve the green curry with Jasmine rice and garnish with fresh cilantro.
